Gan Shan unveils its next evolution with a new menu that celebrates the flavors of Southeast Asia.
This new chapter for Gan Shan is an exciting and transformative step forward. Head Chef Ray Hui, whose culinary perspective has been reshaped by his experiences in Asheville, is eager to introduce the bold flavors of Gan Shan’s new menu to the community. Guests can expect vibrant new dishes such as Vietnamese Caramel Chicken Wings, Shrimp Larb, Bahn Mi, Drunken Noodles, and Curried Fried Rice, in addition to freshly rotated ramen each month, ensuring there's always something new to try.
Born and raised in Fort Myers, Florida, Chef Ray’s early culinary experiences were steeped in Chinese traditions - but it wasn’t until his move to Western North Carolina that he fully encountered the dynamic world of Asian cuisine.
“This menu is a reflection of my journey since moving to Asheville - rediscovering the flavors that first inspired me and shaped my perspective as a chef,” shares Chef Ray. “I had never been exposed to this type of Asian food until I moved here. I learned that no matter where you are, food can transport you to another place. It took me moving away from home to find that for myself. It’s not just about creating dishes; it’s about bringing people an experience that feels both new and familiar.”
Chef Ray’s journey in Asheville has been deeply influenced by his time at Gan Shan Station, where he honed his skills under the mentorship of Chef Will Cisa, former Chef de Cuisine at Gan Shan Station, Executive Chef of Jettie Rae’s Oyster House and now the Director of Culinary for all of The Scheffer Group brands. Gan Shan, formally known as Gan Shan West, has evolved from its early beginning in 2017 as an offshoot of Gan Shan Station, which closed its doors in 2020, into an entirely distinct foodie destination. Under new ownership with The Scheffer Group since 2023 and with a fresh vision, it now stands on its own, delivering exceptional hospitality and a unique, neighborhood dining experience in West Asheville that truly reflects its independent spirit.
